YEAST Species

The species of yeast used for fermentation is another significant difference between ale and lager yeast. Ale yeast is primarily Saccharomyces cerevisiae, a species renowned for its versatility. This yeast is widely used not only in beer brewing but also in baking and winemaking. Saccharomyces cerevisiae is well-adapted to a range of environmental conditions, which is why it performs well at the warmer temperatures required for ale fermentation. Lager yeast is Saccharomyces pastorianus. This species is a hybrid that emerged from the combination of Saccharomyces cerevisiae and another yeast species, Saccharomyces eubayanus. Saccharomyces pastorianus is uniquely adapted to ferment at cooler temperatures, making it ideal for lager production.
